It seems the Pro-Ject Streambox is itself only a Raspberry Pi running a customized version of Volumio. I am no expert on this, but maybe that would allow to rebuild a similar device based on a Pi running Volumio.

I think you are right@TheGerman the Project S2 ultra is a small format RPi running a custom version of Volumio, it ticks most of my boxes but the price is more than I would like to pay and the lack of analogue is a limiting factor for me.
Your suggestion of using an RPi and doing the rest myself does make sense. I am currently considering RPi or small format PC
