I never liked Joe Cocker’s version of Help, but I did like Deep Purple’s., on their first album Shades of Deep Purple. Deep Purple also did what, to my ears, was a good rendition of We can work it out on their second album, The Book of Taliesyn.
Other covers that I thought added something are Marmalade’s Obla Di, and possibly Siouxie & the Banshees’ Dear Prudence
I couldn’t find it on YouTube, you may be luckier. Ben Sidran does a fantastic version of Come Together on the album Live from Montreux.

In a very different style, Brad Mehldau gets some lovely ideas out of Blackbird.
