YUV is avoided as much as possible in acquisition and post these days at least for the film and high end sector I am in. It’s all raw sensor data, debayered to 16bit floating point Scene linear for compositing or 10bit log encoded for grading so colour sampling doesn’t come into it. But a whole world of other pain does.
