A friend dropped off a good 'ol Ebisen (meaning shrimp crackers) now made in Philippines and rebranded as oishi. It’s been years I ate one of these and oh my it is sweeter than I remember!
Almost certainly modified for the local preference in the Philippines. Ebisen are still mild in Japan.
Having been to the Philippines on business, one thing that struck me was the flavour profile of everything is just four concepts.
- Intensely salty
- Intensly sweet
- Oil
- Chocolate
