We have birch trees which grow like weeds at the end of our garden. I thin them out a bit every year to leave a few nice specimen trees, and let the undergrowth thrive between them. I have taken to using a birch as a Christmas tree. Of course it doesn’t look anything like a traditional tree, but it still makes nice decoration, and I feel better about sustainable use of a native species than I would about using a farmed conifer.

A Naughty Night is a current favourite over winter…
35ml blended scotch
25ml elderberry liqueur
25ml sweet red vermouth
2-3 dashes orange bitters
1 strip orange peel, to finish
My favourite cocktail os a Porn Star Martini as mixed by the Covent Garden Social Club (beneath the delightful Arts Theatre in Great Newport St), which I try to visit on infrequent stays in London. (I have made at home as well.) Otherwise I mostly only have cocktails on holiday in tropical places, when Pina Colada works in the Caribbean, Frozen Mint Daiquiri in the Maldives, and a pfallback of Maitai in other places.
Reluctant to pick just one as a favorite but if you twisted my arm then, currently, it’d be the French 75.
If pushed I could live with a Singapore Sling or a Mai Tai.

A Shaky Pete is the best cocktail I’ve ever had, but admittedly I haven’t had to many. I prefer a good(!) beer.
One without a name, but a bartender in the US agreed that Bacardi, lime and ginger ale was a good refreshing drink.
I worked in Brasil for a few years, and was rather taken with the national drink down there.
Caipirinha, a mix of cachaça, a liquor made from sugarcane, with crushed ice, lime and sugar.
Very refreshing on those oh so hot evenings.
One of my favourites. I’m glad you mentioned it, you just reminded me that I’ve got a bottle of Cachaça stashed away. I might get it out for new years eve.

I’m not really into cocktails, more of a single malt person, but just one of these brings back some great memories of Brasil.
Hardest part is crushing the ice!
I never crush ice, it just melts quicker and dilutes the drink more.
Obviously needs more Cachaça then.
