Ben came back with me from the hospital, so cooked Chinese style chicken, veg and noodles. Easier to do it for two.

Looking forward to my slow cooked “summer skirt stew”
A long family tradition recipe of beef skirt with vegetables and a glimpse of greens.
Similar to my supper: basmati rice with leeks, spinach and asparagus.
Seared yellow fin tuna steak which was coated in olive oil, crushed garlic, chopped fresh chilli, lemon juice, salt & pepper. In a hot pan, no more than 2 mins per side. If you do 3 mins each side, it will be cooked all the way through. Before cooking, there should be absolutely no fish smell from the tuna.
Jersey New Royal baby potatoes coated in olive oil, salt & pepper and fresh rosemary from the garden. Roasted at a very high temp. Crime to use Jersey New Royals, but it’s the peak season and I can’t eat boiled ones every day.
Tomatoes coated with sauvignon blanc vinegar, olive oil, fresh oregano and fresh basil both from the garden, Maldon salt & pepper.
It has to be fresh ‘common’ oregano and not the potent spicy Greek one. This, the fresh basil and rosemary made the meal special.
Corn on the cob too.
A little bit of home made tartare sauce and horseradish sauce on the side.
A warm salad of new pots, soft boiled eggs, asparagus and crisp prosciutto. Dressing of garlic mayo/yoghurt/lemon juice with dill and chives
