What are you preparing for dinner tonight?

This one is purchased directly from the fisherman. Otherwise you can’t find such big fish on the market. Usually I buy between 1,5 and 3 kg but this one should be the real thing😊 And yes, in Bulgaria is also expensive and not widely available compared to other local fishes.

Grilled vegetables and hamburgers. I start with marinated slices of eggplant and sweet potato, leave them just a few minutes on the fire and then microwave them in a glass container for another three minutes. I add to the ground beef (at room temperature) chopped onion and cilantro with some salt, pepper and garlic. The meat is cooked medium-rare and in the meantime the wife prepares a small salad.
The grill outside stands about 20 feet from two separate feeders and the birds do not allow me to disturb their dinner with my cooking so I get a lot of company and chirps summarizing their day. What a luxury.

This reminds me (as a self-confessed Vegan) of the Chinese wet market in Wuhan.
Having said that it is just me, I can see others like your pictures (especially the 2nd one) !!!

Fish delivery just arrived … monkfish tail.
Now I need to clean and skin it before dividing in to steaks.
Photos to follow … the first shows the skinning in progress (1.3 kg); I will leave the membrane on until the steaks are prepared for cooking. The second shot shows the steaks; but my aim was off today to they are uneven. The small steaks are for tonight, they will be poached in a fumet made from the skin and bones with wine, mushrooms and onion. The rest will be frozen.

Tonight will be steak, with rice, and probably peppercorn sauce (if we’ve got any cream). Veg possibly Pak Choi (aka Bok Choi) as it is extremely vigorous in the garden at the moment! Steak is ribeye, and will be seared at very high temp to make well done on the on surface but rare inside, and rested of course so it doesn’t bleed into the cream.

Calzone pizza, using whatever ingredients we can find in the fridge. The pizza dough is currently being produced in the brand maker…authentic? Nah…but tastes good!

I prefer T-bone steak, and I remember that it was very hard to find it in London.

I made a Chicken Ruby Murray tonight and SWMBO obeyed loved it

Fish Friday.
Mackerel again, but this time whole bought.
Trimming out its insides revealed a great portion of milts.
Simply baked with salt and pepper. The milts turned out absolutely delicious and sweet.
The mackerel wasn’t too bad either.

We passed up on the only lidl komado bbq today, thought others should enjoy…tough decision, really fancied a duo.

I made cod pullao earlier, using a recipe from an old Madhur Jaffrey book. I actually used locally caught pollock. To go with it was peas and cabbage from the Michael Pandya book I recommended earlier. We had no cabbage so it was just peas. Whatever, it was absolutely delicious.

I prefer fillet, but rib-eye pretty good, and it’s my wife’s preferred.

We have different tastes in meat - she likes Wagu, I find it far too fatty!

Wow! Such a good taste!!!

Those are the the things that we all must try (before we die !) - Wagyu beef, Caviar from the Caspian Sea, Hokkaido Uni, Black Truffles from Périgord… and of course Peking Duck.
