Just on Tomorrow Never Knows, I can think of a few interesting versions not mentioned - Eno’s sublime version on 801 live, Los Lobos (outstanding shronk guitar), the a capella version by Five o’clock shadow and the exotica meets lounge of Morgana King. A particularly funky instrumental version is by the French saxophonist Francois Corneloup.
While the original for me is one of the cornerstones of modern music, these interpretations shed different focuses on aspects of the song - which is all you can ask of a cover.

Gary Clark, Jr., Come Together is one of my favorites.
Tommy Emmanuel displays some stunning technical ability on solo acoustic guitar when he performs a Beatles medley. Incredible talent.
