Given your niece is 27 not 67 surely you need to find something contemporary. I would also suggest something with a gatefold or spectacular sleeve, part of the joy of vinyl is the record sleeve. The best advice will surely come from a good record shop or someone of similar age to your niece? I have 2 daughters in their 30s. They devour music and enjoy some of what I enjoy but they wouldnāt go near Dark Side, Clapton etc. They listen to stuff Iāve never heard of mostly. Youāre trying to encourage your niece to buy vinyl not become you, surely?

Ah, now that is clarifying things! So she has requested, not you thinking it would be a nice thing to do.
No-one has suggested anything classical yet, which might be better that other genres as perhaps less risk of pure dislike or excessive shock to system? Maybe something like Bruchās violin concerto which is delightful, or Vivaldiās 4 seasons? Music like these tend to have very wide appeal, however Iām not the best person to recommend as my knowledge of good vinyl releases is limited, and Iāve bought no new vinyl since early 1990s. Perhaps put a request for suggestions on the classical music thread?
It is precisely because of the bind (supply me with top notch vinyl, but Iām not telling you what I like) that I am seeking community suggestions and not foisting my own playlist upon her. Even Loki-daughter and Loki-nieceās elder sister seem incapable of narrowing the field! The gatefold idea is genius; one of the attributes that make this format magical!

Led Zeppelin 1, 2 and 3 are popular with Gen Z. I talk to the guys and girls at HMV and they love those albums and Pink Floyd DSOTM and WYWH and the classic Meddle!
As an old man myself Iām just suggesting old men recommending their favourite āHiFiā albums for a 27 year old isnāt a great place to start in your quest to excite your niece and encourage her to buy more vinyl. I donāt question your decision to seek advice, only the best place to get it. And, it goes without saying really, I wish you well in your quest. Present buying is a bind at the best of times. My daughterās are both home for Easter. If I remember Iāll ask their advice and pass it on if they have anything to offer.

Half the fun when I was young was looking at all the marvels in the racks, then having to choose one. Obviously now to find out if you like it, you donāt get to lurk in a listening pod anymore - but what fun that was!

As @Neilb1906 offered up London Grammar have a good selection, I might not go with Californian Soil though as a couple of tracks have added pops and clicks on them for effect and designed to make it sound like dirty vinyl. Last release , Greatest Love has some banging tunes on it.
Likewise, would recommend Faithless 2.0 on vinyl and also their last two albums, Champion Sound or All Blessed.
Already in the list is the impeccable Daft Punk Random Access Memories.
Agalloch vinyl is always pricey and in high demand, yeah (mineās a first pressing) but Iām sure there are re-prints for reasonable prices.

A great sounding album on vinyl and also a great album is Wildflowers by Tom Petty.
The standard reissue sounds fantastic but the Onestep version cannot be beat imo.
Based on my own experience, the record that pulled me into classical music was DvoÅĆ”k Symphony no. 9 āFrom the New Worldā, which blew my mind.
The copy I bought from Woolworths in Mare Street, Hackney (late 1970ās) was conducted by the renowned organist Daniel Chorzempa, but there are ābetterā versions out there.
I suggest some Googling/AIāing on your part, followed by some streaming research, to chose the right performance, though KubelĆk is a good place to start.
I know we are only recommending one record, but if you felt the DvoÅĆ”k was perhaps a bit over-theatrical, you could go safe with Yo-Yo Ma playing Bach, several options here, I would suggest:
