We had ours right in the middle of covid and had take away fish and chips from the Magpie (best fish and chips in the UK) eaten on the pier at Whitby. With our 2 dogs and nobody else. It was very romantic and very good value too!!
I also use global knives, having some that are getting on for 30 years old and in daily use. I started with a carving set and one medium size rather than an assortment as this gave me two daily knives rather than a selection of task specific ones. Then as time passed i kept adding as needed.
If investing in quality knives, a block for storage and sharpener is worthwhile along with a travel roll if you cook away from home often.
Like AndyP and Willy, I also use Global knives for most kitchen duties because they are easy to maintain (made from stainless steel) and they have a lovely balance. They are available individually or as part of a knife block/magnetic set which includes a chef’s knife and an assortment of smaller knives (a set with four knives is perhaps all you need). They are pretty sharp out of the box but if you’d like them to be really sharp you may like to consider sharpening them on a couple of different grade whetstones (Global sell a double sided whetstone with 1000 grit on one side and 3000 grit on the opposite side). I also have a ceramic sharpening steel to quickly hone the edge (when required):

I have this Unimi. But looking online they seemed to have changed the brand since I last bought it a few years ago.
Those expensive knives need a proper stropper wet chopper blocker.
Just to go to the other end of the scale, I probably own three times as many knives as shown here, I have used many others in family and friends homes. It’s like buying speakers, all different, try them first.
I have slender hands, long fingers, so immediately my grip is different to yours…
Effectively divided into two, old and rarely used, then my current favourites.
Top right, one of three bought in a hardware store in Ilfracombe about 1976 when the caravan we stayed in had no knives with a cutting edge. French brand, Cuisena. As you can see, it has been repaired, the other two are long gone.
The second, probably 100 years old, bought when we were short of money, something from a BBC programme and book, The Goode Kitchen, all about frugal living. This takes and holds an edge better than any knife I own.
A filleting knife from about 1970 when I left MacFisheries after four years as a Saturday boy. It was about to go in the waste, the blade considered too worn.
A chefs knife given to me about 1976, well worn.
A Lakeland own brand, with older arthritic hands I find it a bit unwieldy.
A Finecut bread knife bought at a hardware store in Lynton 1978. Still in daily use, as well as bread, it is better than any knife I own for slicing tomatoes and cucumber.
My three daily knives, the santoku is labelled Sabatier, but is made in China and sold under an old Sheffield brand name, bought for £7 in T K Maxx. Sharpens up nicely with an Ikea diamond steel.
Linea brand, high carbon blade, slightly flexible, used for filleting, boning and slicing cold meat.
Marked Shogun, again Chinese made, sold under a UK name and bought in T K Maxx.

I use this to sharpen my global knives.
It’s got two grades of grit as replaceable wheels and is water cooled. Most effective.

There must be some hifi gear the wife wants. Mine keeps saying there isn’t, but I’m sure she’s just testing me.
Global are very good as others have said but pricey. We use Robert Welch Signature knives. They are ground in a similar way to the Japenese knives using good quality German steel

I’m old school. I use the palm of my hand as a strop. And Mrs Willy, maintaining a kitchen knife, that’d be a first! Though to be fair all her goldsmithing tools are very well looked after.

I have too many LED torches and am convinced I’ve damaged my lower incisors which have chipped by often holding a small LED torch body between my teeth! ![]()
I got one of these Fenix torches for my daughter when she went on a long coastal walk/camping trip earlier this year, now it’s utterly brilliant for me when pottering in the garden in the dark, BBQing etc!
